饮食杂记 -- 冰糖山楂烧排骨

材料:

排骨一斤,新鲜山楂一两,冰糖一两,食盐适量。

做法:

烧一锅滚水,将排骨在滚水中涮两三分钟后捞出。在干净的锅中烧水少许,加入排骨。山楂去核切成四瓣,待排骨汤滚开之后加入,同时加入冰糖和食盐。文火熬煮半个小时以后改中火收汁。

又另:

不要加葱姜蒜等辛辣调味品,也不能添加料酒、味精和鸡精。食盐越少越好。
